Gluten Free Chocolate Chip Cookies

Gluten free chocolate chip cookies RUN! They always taste terrible and crumble and are dry and lifeless, but wait! This is Momsypoo.  I have the answer.  Follow me to the best ever gluten free chocolate chip cookie you will ever eat, or you made it wrong.  LOL

I was reading about every gluten free chocolate chip cookie recipe out there and looking at the photos, and they just look dry and hard.  I compared the gluten free chocolate chip cookies to the “regular” cookies.  I thought, I got this! I opened my cupboard and started, and to tell the truth, I hit it out of the park!  

Please, all joking aside, try this recipe.  Use the ingredients I say in the amount I say and enjoy.  It has been years since, my daughter has had a gluten free chocolate chip cookie taste like the old fashioned ones, she had as a kid.

It makes 3+ dozen cookies, and in 18 hours we have 4 left.  My family likes them, but 4 is not enough so I will make more again today.

Ingredients

21/4 C Bob’s Red Mill Gluten Free Flour
½ tsp baking soda
½ tsp salt
 2 sticks butter,soft  (not margarine)
¾ C sugar
¾ C brown sugar
2 eggs, slightly beaten
1 ½ tsp vanilla
1 C Ghirardelli Dark Chocolate Chips
¼ C flake coconut

STEP – 1
Get a large bowl.  Add Bob’s Red Mill Gluten Free Flour, baking soda, salt, and set aside.

STEP – 2
In your electric mixing bowl, mix butter, sugar and brown sugar.  Mix on medium till light and fluffy.

STEP – 3
Add eggs and vanilla, and mix till fully incorporated.

STEP – 4
Add chocolate chips and coconut flakes and mix until the dough is light and airy.

STEP – 5
Spray cookie sheet or use a baking mat.  Drop cookies by spoonful.

STEP – 6
Place cookie sheet in 350 degree oven for 8-10 minutes plus.  Check the cookies.  They will spread, so place them at least 2 inches apart.  Cookies should spring back when lightly touched.  Allow to cool on pan 5 minutes before removing to a cooling rack or the cookies will break.

These cookies aren’t crispy.  They aren’t chewy either.  They are a mix of both.  I hope you enjoy them.  

I absolutely love Bob’s Red Mill Gluten Free Flour when it comes to baking.  It is definitely my go to flour.  I think that it will surprise you how much these taste like grandmas. I have all my Christmas cookie, other holiday cookie, recipes transferred over to Bob’s, and they all work great so far!
