500-degree chicken is originally made a bit different. I have had to change it a bit to make it gluten free 500-degree chicken. When I used to make it, I would use wheat flour to make the gravy. Now I make it truly gluten free 500-degree chicken because we use the juices and buttery spices as our gravy. My daughter liked it that way, so it kind of stuck with us.

The 500-degree chicken recipe was found on Chef Emeril Lagasse’s website many years ago. It is one of the cold night, we need comfort food, recipes. I love how it heats up the house and causes the most amazing, wintery aromas throughout.
(This is a big, chunky meal. Don’t cut your veggies too small or they will either burn or turn to mush.)
Ingredients
Whole chicken
5 pounds potatoes, peeled or skins on and cut into large chunks
3-5 pounds carrots, cut into big chunks
3 large sweet onions, cut into ¼
4 sweet potatoes cut into 1-2 inch sections
1 entire head of garlic, peeled and chopped
12 Tbsp butter, melted
4-6 sprigs of Rosemary
pink Himalayan salt/pepper to taste
Take out your large Thanksgiving roasting pan for your dinner of gluten free 500-degree chicken!
STEP – 1
Chop all veggies into large pieces and put in the bottom of the roasting pan.
STEP – 2
Put rinsed, raw chicken on top of veggies. Put 2-3 sprigs on top of chicken and dust with some Himalayan pink salt and fresh black pepper.
STEP – 3
In a separate small saucepan, melt butter and add garlic. Remove green leaves from the remaining stocks of Rosemary and add to butter mix.
STEP – 4
Pour butter mixture over chicken
STEP – 5
Heat oven to 500 degrees. YES! Your oven should heat that high, 500 degrees.
Wait till your oven is hot and put roasting pan with veggies and chicken in for 1 hour. Do not fiddle with it. Walk away and let the oven cook.
STEP – 6
Remove pan from the oven at the 1-hour mark, not a minute early.
STEP – 7
Let the chicken rest for 10-15 minutes as it is still cooking.
We serve this recipe with a hearty homemade bread. You will want the bread to soak up the juices from all the butter and garlic.

It was about 15 years ago. My niece wanted a medieval wedding. She wanted big crusty bread and wheels of cheese. There were to be lots of roasted veggies and meat, lots of meat.
I made 500-degree chicken! We had the roasted veggies in metal tureens. I had turkey legs on big wonderful platters. She had her dream wedding, and the guests feasted like King Henry VIII!
It was a truly magical day. I was able to do a wee little bit to add, and I’m sure it wasn’t what the guests expected. Their amazement was funny. Did they truly think we would be serving tea cakes and fondue on my niece’s medieval day?
